What exactly is this Kombucha that more and more people are drinking?
Kombucha is a tasty, effervescent, probiotic filled, fermented tea that can be flavored to a wide variety of different flavors.
A sweet tea brewed from either green tea, black tea or a combination of both is fermented with something called a SCOBY.
If you are completely new to the world of Kombucha, you may be wondering “WTF is a SCOBY?” I know that my curiosity peaked when I first saw it.
SCOBY is an acronym for Symbiotic Culture Of Bacteria and Yeast.
The SCOBY is added to the sweet tea blend, it is left to ferment for 7-10 days, or until the desired flavor is reached. The longer you leave it to ferment, the more tangy will become.
Typically, kombucha is a bit tart with a hint of sweetness.
The flavor will be affected by both the length of fermentation and by any flavors added after fermentation is complete.
Fermentation time is a matter of preference, but typically, 5- 7 days is the recommendation.
